Purple tinged pink fizz that smells like ripe mixed berries and is delightfully juicy on the palate, all owed to the "Saignée" method. (Saignée “sohn-yay” means “to bleed". After a short maceration, the pink juce is drawn off). The palate is very precise and clear whilst offering lots of ripeness. From a parcel that is 45 years old on Kimmeridgean soil. All from 2021 vintage. 79% in steel with 21% in Barrel. 1g dosage.
The Barbichon family, now in their fourth generation of Champagne growers, farm just under 9 hectares around Gyé-sur-Seine near Les Riceys, on clay-limestone soils. Since Thomas took over from his father Robert, a more natural philosophy has been instilled. Organic certification in 2007 moving to Demeter certification a few years later. In the cellar they have started incorporating barrels in various parts of the vinification. The wines remain clean and classic with a prominent fruit profile.
