A sparkling red made from fruit that is selected from all of Max’s vineyards / Spending 5 days on the skins and then fermented in a mix of concrete and steel. Very expressive on the nose, with subtle scents of dark fruit such as blackberries and cherries, crossed by live herbaceous notes and a slight but persistent spiciness.
