Jérôme François farms 7ha biodynamically, having taken over his family’s tiny 0.2ha plot at just 23. Inspired by his grandfather, a viticultural scientist, he’s grown the domaine with help from friends and the strength of Sirius, his horse. Nearly all wines are single vineyard but multi-variety, depending on the plot.
The first release from a new Vineyard previously owned by Marc Tempe, so farmed Biodynamically for the last 25 years. The parcel is part planted in 1970 and part in 1995
on clay and limestone. The fruit is pressed off over a 9 hour period. Strengthening the wine with hyper oxygenation and adding a little more complexity from a tiny amount of skin contact. From the press straight into barrel, where they are left on the gross and fine lees until bottling. The wines are not racked.
