A subtle pinky/orange tinge from the skins although very little tannins. Amazing aromatics, think flowers, honey and a hint of raspberry. As with all of Jeromes wines there is plenty of texture on the palate and a concoction of ripe fruit and minerality.
Jérôme François farms 7ha biodynamically, having taken over his family’s tiny 0.2ha plot at just 23. Inspired by his grandfather, a viticultural scientist, he’s grown the domaine with help from friends and the strength of Sirius, his horse. Nearly all wines are single vineyard but multi-variety, depending on the plot.
The fruit is pressed off over a 9 hour period. Strengthening the wine with hyper oxygenation and adding a little more complexity from a tiny amount of skin contact. From the press straight into barrel, where they are left on the gross and fine lees until bottling. The wines are not racked.
