A full bodied expression of Catarratto that has lots of citrus rind and floral aromatics with a distinct salty character and a nutty finish. Lots of concentration here.
Vinified in steel and aged in steel. Bottled before the next vintage, then aged in bottle in the cellar. Each vintage of Francesco’s wines are experiments, as he attempts to find the perfect way to express the varieties and terroir of his land. He is committed to low intervention and minimal sulphur use, and sings ariettas to his tanks and barrels as they mature.
