A beautiful, yet not so well known, grape variety that produces elegant whites with soft floral notes, stone fruit flavours and a slight almondy character. It's also used to make deliciously age worthy sweet wines in the region called Vino Santo. From vineyards typically between 250 and 300m up around the lake. The grapes are fermented in stainless steel and remain on the skins for 30 days before being pressed off. Despite the long maceration, the wine maintains its elegance and feels very much in the "white" camp rather than "orange".
