Vibrant yet cool expression of pecorino, think cantaloupe melon, bitter almonds, cucumber and ripe pear. The wine is pressed off, fermented and aged in steel tanks only with some lees contact. 

The project was started from scratch sourcing a large portion of their vines from the cuttings of Emideo Pepe’s old vineyard. Trebbiano and Montepulciano are planted with the first vintage of Pecorino available on this release. In between and around the vines they also have olive groves, ancient grains and apiaries, trying at all times to keep a balance of biodiversity while producing their own Pasta and Honey
