Deep and dark with a hint of black olive. Complex and age worthy but there is elegance too. No oak is used, just stainless steel and a small amount of concrete, helping to retain the freshness in the wine. The project was started from scratch sourcing a large portion of their vines from the cuttings of Emideo Pepe’s old vineyard. Trebbiano and Montepulciano are planted with the first vintage of Pecorino available on this release. In between and around the vines they also have olive groves, ancient grains and apiaries, trying at all times to keep a balance of biodiversity while producing their own Pasta and Honey
