We have worked with Pablo for some years now, although mostly while he was making wine for another producer. Now, with his own project underway, Pablo is farming small parcels around his village and vinifying between two cellars, each not much larger than a shed. This will be the way while a new winery is constructed in front of his home. The vineyards are more inland and gently rolling, rather than the dramatic sheer slopes the region is famed for. For Pablo, this is a blessing. With temperatures rising in recent years, many of the region’s vineyards are becoming too hot and dry to produce the quality he is looking for. Many will know him for his work with Fedellos do Couto, where he was the lead viticulturist. Originally born in Argentina, he and his sister both decided to return to where their father was born to pursue their different goals. Winemaking is, as expected, hands-off, using whatever vessels he has been able to acquire. Mostly steel and fibreglass, with a few barrels used when he feels the wines are suited to ageing.
