Named Hérisson (“hedgehog”), this cuvée represents the more experimental side of Château Peylaby. Each year, Blandine and Jérémy choose two parcels that show particular promise, giving them a distinct élevage in amphora — with part of the 2022 also aged in a concrete egg. These vessels bring texture and finesse without overshadowing the clarity of fruit.

The 2022 is fragrant and poised, with lifted red and black fruit, gentle spice, and a fine mineral thread. The amphora ageing lends elegance and a supple mouthfeel, keeping the fruit at the centre while adding a subtle textural depth.
