In the cellar, this means \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eminimal intervention, natural fermentation and very little sulphur\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, with wines given time to develop. Most ageing is done in stainless steel but there are some barrels whcih are used when appropriate. Francesco is perhaps best known for producing wines of remarkable \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eclarity, energy and individuality\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, rooted firmly in the landscape of Sicily.
