With little money to invest, the winery began very simply. For their first vintage, made entirely from local red varieties, the grapes were pressed by hand in the garage of the property, with fermentation and maceration taking place in a steel tank borrowed from a neighbour. Five old barrels were sourced to mature the wine, while a \u003cstrong\u003erubber hose was used as a bottling line\u003c\/strong\u003e. Yet the wine worked. As time went on, their interest in \u003cstrong\u003ebiodynamic farming, energy and viticulture\u003c\/strong\u003e grew. The vineyards were converted and, even though losses of fruit were at times devastating, they persisted. They produced their first \u003cstrong\u003esparkling Franciacorta in 2001\u003c\/strong\u003e, the same year they purchased their first pneumatic press. From there, the focus has been on producing the \u003cstrong\u003efinest quality sparkling wine in Italy\u003c\/strong\u003e, greatly inspired by the \u003cstrong\u003egrower Champagne movement\u003c\/strong\u003e. All wines are fermented and aged in barrel, with lees ageing dependent on the vintage and lasting for anything up to \u003cstrong\u003eeight years\u003c\/strong\u003e.
